This is gorgeous! Looks like a real bathymetry map (and I say that as an earth scientist). I would say the top map's colors are much more intuitive in terms of topography than the bottom one, so I would just create a legend for it and stick to that. My eyes don't really see olive browns as "low" and pinks as "high". Might just be me though!
